I do most things with an old (10+ years), cheap (~$30) Henckels cleaver. It sharpens nicely and is still a joy to use.

It's so old that I couldn't find a picture of it! Plastic handle, no rivets, and a perfectly rectangular blade.

I'm glad you asked! I've been procrastinating about giving photographic evidence of my knife of choice.

On the left: the 10.5" Masanobu gyutou that my sweetie got me for my birthday while we were in New York.

Beside it: a 3" Shun paring knife. Just to show how ridiculous the thing is.

It's fantastic. The combination of extra cutting length and the tapered shape of the blade make it a dream to work with.
