What's in your risotto? [General]

What flavor combination have you used in Risotto?

My favorite so far:
Sun-dried tomato, Prosciutto and Goat Cheese. With some pine nuts for an extra crunch...

Anyone else would like to share?

Mnnn that sounds really good!
My favourite combo is Butternut Squash, sage and a generous helping of Parmigiano-Reggiano.

fresh asparagus, lemon zest & fresh lemon juice, bit of garlic, lots of freshly grated parmesan.

for my husband, rustic seafood risotto with beaks and all. yuck!

Whatever is in season. My favorite though, is peas with tomato sauce added to it.

I've made a wonderful green risotto with a puree of watercress and spinach stirred in at the end. Yum! Mushroom risotto and butternut squash with sage are also staples around our house.
