May be = verb & auxiliary, Maybe=adverb, synonym for perhaps. If you feel tempted to write 'may be', try replacing it with 'perhaps' and see if it makes any sense. Source: howtosayit.blogspot.com

Both are talking about a possible (or not) event, or an uncertainty.
I think "may be" conveys a hint of skepticism, whereas "maybe" conveys a hint of possibility. "May be" expresses doubt, whereas "maybe" is a suggestion.
For instance: "It may be you are a smarter person than I, but . . . " [i.e. you could be smarter, but don't count on it]
Or: "Maybe we shouldn't kiss . . . " [possibly we SHOULD kiss]
It's a nuanced difference.
Now in the same sentence:
"May be, you can achieve that" (some doubt, possibility of failure)
"Maybe, you can achieve that" (suggestion, possibility of success)

I am going to print them out and read when I forget the difference of may be and maybe.
Cakelady: After I read your message,I went to Le Cordon Bleu but they didn't have pince a tarte. (They recommended me to check out C.A. Paradis.)
I couldn't find it at Cordon, However, I ended up spending two hours at school. I checked out all the facilities and had an opportunitiy to meet Mr. Christian Faure, Executive Pastry Chef and Director of Operations at ottawa school. God of French Pastry!! I will attend on going pastry demo class next week to experience what is like learning at Le Cordon Bleu!!
I have decided to study patisserie diploma at Codon Bleu soon after I graduate from Baking and Pastry Arts program at Algonquin College next year.
That way, I can acquire all the skill and knowledge that I need to become a pastry chef... from everyday cinnamon rolls to Michelin restaurants' dessert.
I am so happy now.
I am going to print them out and read when I forget the difference of may be and maybe.

Aisu, so glad you enjoyed your time at Cordon. I am a graduate albeit many, many years ago in London, UK. The knowledge you will receive is wonderful and will be recognised world wide and will open many doors for you career wise.
Good Luck! Once you have completed the diploma try to go to France or Germany as the pastry level there is top notch.
