Asparagus on special at Loblaws [Food/Vendor]

$2.00 a bunch ~ 1lb

I did this:

2 tbsp olive oil
1/2 small red onion sliced
2 cloves garlic
salt and pepper
a spritz of lemon

heat oil and saute all that for 2 mins till tender

1 bunch of asparagus, chopped at 1.5"

toss those in, and cook for 8 mins on medium low til tender, mixing up frequently

a few shakes of balsamic + 1/4 cup orange juice (was out of white wine, or would have used that)

simmer and deglaze for 3 mins

place in a shallow baking dish like a pie plate, pour the remaining liquid from the pan on them, sprinkle grated parmesan and bread crumbs on top, and broil in oven for 2 or 3 mins till golden.

So easy...and delicious! It was a meal on its own, for me.
