Smoking with Coffee Grounds? [Cooking]

2009 May 10
Anyone ever try this?

I think about all those grounds I toss out and while they do make great compost, I'm thinking there has to be something else I can do with some of them. I know that they will burn really well (and really hot) when dried out - if I had a wood stove I'd probably do that with all of them.

I'm thinking that some coffee character in smoked meat would be really nice.

can't answer your question about smoking them, but at my cottage, i burn mine in the wood stove. when it is hot enough, we actually burn a lot of food scraps. we use the ash to keep the smell down in the outhouse. i just throw the wet grounds into the fire, it dries out and burns up very quickly.

I started the same thread on the brewers' list and just got this advice back from a buddy who is a very good brewer and cook :

I wouldn't. I accidentally burned some beans while roasting the other
weekend, and I tell you the smoke was extremely harsh - I wouldn't want it
in my food. But why not use soem freshly brewed coffee it in a marinade, or
in your basting sauce? I did a turkey with a Redeye sauce loaded with
espresso, and it turned out very nicely indeed.

Zym - I second your buddy's comment, it's a very bitter smoke taste. Do not do it.

I 3rd the statement
while smoking with tea leaves work, burnt coffee is burnt coffee
if you want the coffee flavour, add it to your brine or rub
as for the spent grounds, compost

Tea smoked duck is excellent... use an oolong or jasmine green tea.

While the compost wouldn't work, if it would be possible to vent the products of roasting green coffee beans, that would do the trick.
