Recipe: Plain Angel Cake [Recipes]

I also call it a sponge cake as well.

I personally like it to be plain and don't like to add glaze or other topping.

Ingredients for Egg Yolks mixture:

1-3/4 cups Cake & Pastry Flour
5 ml Baking Powder
3 ml salt
1/2 cup granulated sugar
6 egg yolks
3/4 cup fresh orange juice

Ingredients for Egg White mixture:

7 egg whites
1/2 tsp. cream of tartar
1/2 cup granulated sugar

For the Egg Yolk mixture

Beat 6 egg yolks well with electric mixer. Then slowly add the following ingredients one by one:

- granulated sugar (half cup)
- oil (1/2 cup)
- orange juice (3/4 cup)
- salt (3 mL)
- baking powder (5 ml)

Make sure the above is beat well and smooth.

Now, add the cake & pastry flour (1 and 3/4 cups) to the mixture and make sure they are blend well (don't stir for too long, 30 seconds should be good enough).

For the Egg White mixture

Beat in mixer bowl, egg whites and cream of tartar to form stiff but moist peaks. Then gradually add 1/2 cup sugar, beating until very stiff and shiny peaks are formed.

FOLD egg whites into egg yolk mixture gently but thoroughly.

TURN batter iinto ungreased 10-inch angel cake tin.

BAKE at 350 degree F for 60 minutes (oven preheated), or until toothpick inserted in center comes out clean.

INVERT and COOL cake completely in pan.

When cool, loosen edges and shake pan to remove cake.

The cake should feel be like a sponge.

I think this recipe is for Chiffon cake as it has oil in it and regular Angel cake has no added fats or oils.I used to make this in the 60's and 70's when it was very popular.

i agree with cakelady. my mom used to make chiffon cake all the time and this recipe is almost the exact same. her's had more eggs in it. it is a lot heavier than angel food cake, so you really don't need anything with it, except maybe a bit of whipped cream.

angel food cake has only the egg whites, is light as air and pure white. it is also wonderful to put slices of it on the bbq and grill slighty to carmelize the outside.
