Jacob's Cattle Beans are also known as Trout Beans, Dalmatian Beans, and Torellen. They are white with a mottled maroon pattern on their surface. These beans are commonly used in baked beans in Nova Scotia, New Brunswick, and the New England States.

Jacob's Cattle Beans are an heirloom bean that dates back to the 1700's. Their origin is unclear--it is possible that they were brought from Europe with German settlers, but it has also been theorized that they were first cultivated by North American native peoples.
