Stracchino is a type of Italian cheese from the Lombardy region. This cow's milk cheese is consumed very young and must be eaten soon after purchasing it. It's texture is creamy and very soft--after a few minutes on a plate, stracchino will "spread." Typical stracchino is very mild and delicate.
Stracchino is easy to locate in Montreal at the Jean-Talon Market. Does anyone know if it is available in Ottawa?
