Good old fashioned fermented cabbage, there is nothing like it! Though mainly a traditional food in Germany and Eastern Europe, it did make it's way into French cuisine in the 17th century and is now widely eaten there as well.

Seconded, actually. I would love to know where to find quality sauerkraut so I can put it into a choucroute and not feel guilty about not doing all that pork justice.
